Recipe for Joy: A Delicious, Sustainable Meal
Food has a profound impact on our mental health. Here’s a simple, sustainable recipe that’s not only delicious but also uplifting.
Quinoa and Vegetable Stir-Fry
Ingredients:
1 cup quinoa
2 cups water
2 tablespoons olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
1 cup broccoli florets
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon grated ginger
Salt and pepper to taste
Fresh cilantro, chopped (optional)
Instructions:
Rinse quinoa under cold water. In a medium pot, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes or until water is absorbed. Fluff with a fork.
In a large skillet, heat olive oil over medium heat. Add garlic and ginger, sauté for 1-2 minutes until fragrant.
Add bell peppers, zucchini, and broccoli to the skillet. Stir-fry for 5-7 minutes until vegetables are tender but crisp.
Add cooked quinoa to the skillet. Stir in soy sauce and sesame oil. Mix well and cook for another 2-3 minutes.
Season with salt and pepper to taste. Garnish with fresh cilantro if desired.
Serve warm and enjoy the nourishing flavors.
